However, for sushi containing raw fish, such as salmon and tuna, it is recommended to control the temperature between -2°C and 2°C to better lock in moisture and texture. Sushi primarily consisting of cooked food or vegetables only needs to be kept between 2 and 5°C. Furthermore, some high-end restaurants, to ensure ultimate freshness, will temporarily store certain types of sushi in flash freezers below -18°C, but these must be thawed before consumption. Therefore, choosing a sushi display case with multi-temperature zone control is more conducive to categorized storage.
